The best veggie burger, with oats, cheddar cheese, sesame seeds and eggs.
The original idea for this recipe came from Vicki Rae Chelf’s 1990 cookbook called Cooking with the Right Side of the Brain. My husband and I were looking for the ultimate veggie burger recipe. We tried quite a few. It got to the point where James would say, “Let’s not make that again.” Then we found what Vicki Rae Chelf called Oatmeal Burgers Deluxe. Because they have eggs in them, they stay together and they have enough flavor you can eat them by themselves, or with condiments. I sent the recipe to Myra, she played around with the recipe, and the rest, as they say, is history!
I have had a lot of people ask me for this recipe. It seems that P.C. Burgers were VERY popular at Myra’s Restaurant. James and I make them at least once a month! I love what mom's employee, Matt Barrett, had to say about them: After growing up eating Myra's probably every year of my life, then briefly working there, getting to eat whatever I wanted, the P.C. burger was eventually my favorite. I'd never had it as a customer. It also happened to be the item the server had to ask the most questions about, and I've forgotten all the choices, but I'll try here: bun, bagel or ciabatta, Swiss or cheddar, Dijonaise, mayo, lettuce, tomato, onion, etc., and lastly, chips or salad, and if salad, which dressing of these 8 million? I got swiss and dijonaise with everything on the bun and it was perfect.
Myra’s recipe called for you to use a ⅓ cup scoop to make the patties. If you do, you will get 6 burgers. We tend to end up with 4 or 5 burgers when we make them at home.

P.C. Burger
Equipment
- 1 12 inch frying pan
- 1 sharp knife and cutting board
- 1 large bowl, for mixing ingredients
Ingredients
- 1 cup rolled oats
- ¾ cup grated sharp cheddar cheese
- ¼ cup sesame seeds
- 1 cup yellow onion, chopped fine
- 3 cloves minced garlic
- ½ teas. poultry seasoning I use 1 TBLS fresh sage when I make these
- 1 TBLS tamari or soy sauce
- 3 eggs beaten
- 2 to 3 TBLS vegetable oil
Instructions
- Mix together all the ingredients and set the mixture aside for 30 minutes, so the oatmeal will soak up all the goodness.
- Heat the oil in the skillet, medium heat, and add the 4 to 6 patties (depending on how big you want them) approximately ⅓ cup each.
- Cook until brown on each side, 4 to 6 minutes, medium heat.
- Serve with Dijonaise Sauce, lettuce, Tomato, on your favorite bun.
Notes
You can melt a slice of cheese on top, or use your favorite Bar-B-Que sauce.
