A delightful, light salad with artichoke hearts, mandarin oranges, raisins, sunflower seeds, and a raspberry dressing.
When Myra created this salad recipe, I don’t think rainbows were associated with anything other than the sky. As usual she was ahead of her time. I thought it was appropriate to put this salad up during Pride month. This past weekend my cousin helped me to make the salad and take the picture. She said it was a “very retro” salad. The mandarin oranges from a can remind me of when I was little. I LOVED those little oranges—my parents would let me have an entire can as a treat. Ah yes, the good old days… My cousin and I decided it’s still a good salad, and it’s vegan. The Raspberry Poppyseed dressing really makes this salad special.

Rainbow Salad
Equipment
- 1 salad plate
Ingredients
- 3-4 cups romaine lettuce, torn or chopped
- 4-6 artichoke quarters
- 8-10 mandarin orange slices fresh or canned
- 1 TBLS black olives Kalamata or Nicoise
- 1 TBLS sunflower seeds
- 1 TBLS raisins
Instructions
- Chop or tear the lettuce, arrange nicely on a plate, top with all the other ingredients and serve with Raspberry Poppyseed Dressing.
