The perfect easy chocolate dessert for a Valentine’s Day Treat!
I have been on a baking jag for the last few weeks. I love to treat my friends to a cake for their birthday. I let them decide what kind they want and I gift it to them. I have all the tools and ingredients to make any kind of crazy dessert they want. How many people do you know that have a separate pantry shelf for different kinds of chocolate AND a shelf just for brown, white, turbinado, and powdered sugar?!
If you have a food processor, this Torte is an easy one to make and it does freeze really well. You can decorate it so many ways, so get creative. The picture in this post is decorated with apricot jam and walnuts. It does work best to bake it in a 9-inch springform pan. Just be sure to put a cookie sheet or pizza pan underneath the spring-form pan to catch any drippings. Otherwise you may end up cleaning the bottom of your oven.

Raspberry or Apricot or Cherry Chocolate Chip Torte
Equipment
- 1 9 inch spring form pan
- 1 food processor
- 1 large bowl
- 1 spatula
- 1 baking sheet to put underneath the spring form pan, in case it leaks
Ingredients
- 2 cups all purpose flour
- 1 cup brown sugar
- 1 cup rolled oats
- 2 TBLS unsweetened cocoa powder
- 2 teas. vanilla
- 2 eggs
- 1 cup cold butter, cut into small pieces
- 1 1/2 cups walnuts (for apricot torte), Almonds or pecans (for raspberry or cherry torte.)
- 1 cup mini chocolate chips
- 1 cup of jam
Instructions
- In the processor, combine the flour, brown sugar, oats and cocoa powder. Pulse just to mix.
- Add the vanilla and eggs, pulse 5 or 6 times to mix.
- Add the butter and nuts, Pulse untill the mixture is mealy (7 or 8 times).
- Put the mixture in a bowl and mix in the chocolate chips.
- Press about 3/4 of the mixture into the bottom of a spring form pan that has been sprayed with baking spray. Leave it slightly higher on the sides.
- Cover with 1 cup of jam. Sprinkle the remaining mixture evenly on top (do not press down).Bake at 350 degrees for 35 minutes. Put a baking sheet underneath the spring form pan in case the butter leaks out. When you take it out of the oven It may appear soft, but it will get firm as it cools. Cool completely before decorating and serving.Decorate with spoonfuls of jam or swirls of melted chocolate, or small pieces of fruit. Makes 12 servings.
