Raspberry or Apricot or Cherry Chocolate Chip Torte

Equipment

  • 1 9 inch spring form pan
  • 1 food processor
  • 1 large bowl
  • 1 spatula
  • 1 baking sheet to put underneath the spring form pan, in case it leaks

Ingredients
  

  • 2 cups all purpose flour
  • 1 cup brown sugar
  • 1 cup rolled oats
  • 2 TBLS unsweetened cocoa powder
  • 2 teas. vanilla
  • 2 eggs
  • 1 cup cold butter, cut into small pieces, unsalted
  • 1 1/2 cups walnuts (for apricot torte), Almonds or pecans (for raspberry or cherry torte.)
  • 1 cup mini chocolate chips
  • 1 cup of jam

Instructions
 

  • In the processor, combine the flour, brown sugar, oats and cocoa powder. Pulse just to mix.
  • Add the vanilla and eggs, pulse 5 or 6 times to mix.
  • Add the butter and nuts, Pulse untill the mixture is mealy (7 or 8 times).
  • Put the mixture in a bowl and mix in the chocolate chips.
  • Press about 3/4 of the mixture into the bottom of a spring form pan that has been sprayed with baking spray. Leave it slightly higher on the sides.
  • Cover with 1 cup of jam. Sprinkle the remaining mixture evenly on top (do not press down).
    Bake at 350 degrees for 35 minutes. Put a baking sheet underneath the spring form pan in case the butter leaks out.
    When you take it out of the oven It may appear soft, but it will get firm as it cools. Cool completely before decorating and serving.
    Decorate with spoonfuls of jam or swirls of melted chocolate, or small pieces of fruit. Makes 12 servings.

This torte can be made with Apricot jam and walnuts OR
Raspberry Jam and almonds or pecans OR
Cherry jam and almonds
OR.... your favorite combination!
