Sesame Salad dressing

A toasted sesame dressing for salads, slaw and other things.

Equipment

  • 1 food processor or blender

Ingredients
  

  • 2 buds garlic
  • 1/2 teas. salt
  • 1/2 teas. black pepper
  • 1/2 teas. dry mustard
  • 1/2 teas. Dijon mustard
  • 1 TBLS tahini
  • 1/3 cup frozen orange juice concentrate (thawed)
  • 1/4 cup balsamic vinegar
  • 1/3 cup toasted sesame oil
  • 1/4 cup white wine
  • 3/4 cup light olive oil
  • 1 TBLS sesame seeds (toasted are best)

Instructions
 

  • In the processor, chop the garlic fine.
  • Add the salt, pepper, mustards, tahini, OJ, and vinegar.
    Blend the ingredients together, scrape down the sides of the processor with a rubber spatula.
  • Put the sesame, olive oil and wine in a measuring cup. Turn on the processor and slowly pour it into the processor. Pour into a jar, add the sesame seeds and shake to combine.

Notes

Use as a salad dressing for lettuce, greens or slaw. 
Use as a marinade for white fish and tofu.
As a drizzle over rice.
